How to Make Nigerian Sausage Rolls

Nigerian Sausage rolls ranges from the trade marked products such as Gala®, Bigi®, and Super bite®  .

These sausage rolls are popular in most major cities in Africa and usually sold by street hawkers during traffic jams.

Apart from the trademarked  ones, sausage rolls  are also  sold at  eateries and restaurants.

But no matter what type of sausage roll you buy, Nigerian sausage rolls usually contains a beef or pork filling and
is simply delicious.

I have various tried and tested recipes for sausage roll, but here’s  how to make a  classic tasty Gala-like sausage rolls.

Ingredients you’ll need for Nigerian Sausage Rolls

For the dough

  • 250g All purpose Flour
  • 1 teaspoon Baking Powder
  • 100gr Margarine or butter
  •   1/4 teaspoon Salt
  •  Cool Water(as needed)
  • 2 medium-sized egg(one for the dough and the other for coating the rolls)

For the sausage rolls filling you’ll need

  • 200g of minced or ground sausage meat
  • ½ teaspoon black pepper
  • ½ teaspoon of ground Nutmeg
  • A pinch of seasoning cube or seasoning powder

Nigerian Sauage rolls Preparation

  1. First grind the sausage meat. Add nutmeg, black pepper and crumbled stock cube/powder. Mix thoroughly to get all the spices in. Set aside
  2. In a bowl, add the flour, baking powder and salt. Mix well , add the egg , mix and add the margarine or melted butter. Mix well by rubbing the margarine into the flour; Continue mixing until the mixture looks like bread crumbs or garri.
  3. Now gradually add  water, until you get a non-sticky  dough.
  4. Break the remaining  egg , whisk it and set aside.
  5. Grease or line a baking tray and set aside.
  6. Place the dough on a lightly floured table and knead for 5 minutes.

7. Let the dough rest for 5 minutes, then Cut out a bit of the dough and using a rolling pin, roll  the dough flat (but not too flat)  form a rectangular shape

Place some of the spiced sausage meat on the dough  and fold the dough.

8. Now cut the rolled dough into two or more equal sizes (depending on the size of  sausage roll you want). Transfer the sausages onto the greased/lined tray and repeat the process for the remaining dough.

9. Now bake in the Oven at 170º C/ 375 F for 35 minutes or until the sausage rolls are lightly browned.

Nigerian Sausage Rolls are usually enjoyed with a chilled drink or yogurt.

Instructions

  1. First grind the sausage meat. Add nutmeg, black pepper and crumbled stock cube/powder. Mix thoroughly to get all the spices in. Set aside

      Thanks Nneka. you don’t have to add egg to the dough but it makes it richer
      and I didn’t boil the hot dog, I used it as it is

      Hi Eliphilet, you can preserve the sausage rolls
      in the fridge for 4 days or the freezer for 3 months
      You can fry the sausage rolls but do not add too much filling
      as it can burst open and unroll in the oil.

          Hi Joycelyn,
          for my sausage rolls I made use of sausage meat that you get at the stores.
          And these do not require any cooking .
          If you are planning to make your sausage meat at home with fresh meat(pork, beef or poultry)
          you also don’t have to cook them before grinding.
          Add the other ingredients, mix and fill.
          Then bake for 30 to 40 mins and enjoy( don’t worry it wont come out raw).

      No dear, it is not the same as the one for meatpie . In Nigeria it is called 'satis meat' and usually sold at most supermarkets… if you check the video above you'll see the meat I used … Do let me know if you have more questions 🙂
