Baba Dudu : How to make Baba Dudu (African Dark coconut Candy)

Baba dudu is a popular street candy in Nigeria. It is another local candy that brings back childhood memories.
It is often available as a chain of short rod-like sweets, wrapped in transparent poly-bags& sold by street kiosk and hawkers .

Here’s how to prepare it at home.
Ingredients for Baba Dudu

* Coconut milk from 2 whole coconuts(see how to extract coconut milk)
* 5 tablespoon sugar
* a pinch of salt

Preparation

* Boil the coconut milk and scoop out the top white layer(coconut cream) into another wide pot and pour off the water left in the pot.

* Now add a pinch of salt into the pot of coconut cream, add sugar and mix together.
Continue stirring, until the color of the cream change to brown
Tip: the cream tends to overflow, so watch it closely and reduce the heat.

* As the cream thickens and comes together, pour onto a flat board , leave to cool a bit and mold into baba dudu shapes, or any shape of choice.
If you want to wrap it up like the baba dudu you buy at the street kiosk, then go ahead and wrap it in transparent poly bags and store in air tight containers.

    Thanks alot for this recipe. The best part of it is dat, i didnt only get baba dudu, i also got coconut oil.

    Hmmm, all was going well,but all of a sudden the creamy constitent started becoming lighter and before I knew it, I had coconut oil. Not sure what went wrong.
