Who doesn’t enjoy a quick and easy meal, yet healthy and filling and at the same time tasty and satisfying?

Do I see your hands up! Exactly, I do too.

That’s why this spinach stir fry is  one of my go-to recipe for a quick meal fix. I like that it is also versatile and can be served as breakfast with some scrambled eggs or just as it is, or lunch accompanying a hot rice dish  and also as dinner with any accompamiment of choice.

As a working mom of three, it is important  for me to have quick , easy and healthy meals in my recipe arsenal, and I guess it’s the same for you too. 

I also do other variation of this recipe, such as the spinach stir fry with shrimps/prawns and Spinach stir fry with chicken and beef strips,  all depending on what’s available in my fridge and pantry. 

The recipe is easy to follow and  you can substitute the spinach for Kale, green amaranth, bok choy or Ugwu. You’ll notice that I added ground crayfish in my preparation. Okay! that is one condiment I love so much.

I know that crayfish is a love and hate for most people, so feel free to omit it in yours. But if you don’t mind the taste of ground crayfish, do give it a try; I assure you of lots of ”Mmm yummy!” moment with every spoonful.

So what  are you waiting for, let’s get down to it. 

Ingredients
– 500 gr Spinach/ugwu/ green amaranth/kale (I used Spinach)
– 1 Onion bulb and Garlic, (chopped, sliced or minced)
– 1 tablespoonful vegetable oil
– 1 teaspoon ground Crayfish(optional)
– 1 Stockcube
– Dried or fresh hot pepper, to taste
– Salt to taste

  1. Wash and dry the vegetable of choice: press the vegetables between clean kitchen towels to dry them thoroughly.                                                                                                                                                            Tip: if the vegetable is wet, it will heat up and become soggy.
  2. Slice the dry vegetables and set aside 
  3. Now heat up the oil in a saucepan until hot; add the chopped onions, garlic, peppers and ground crayfish(if using). Stir-fry for about 10 seconds.                                                                                                                          TIP:The crayfish gives it a delicious and distinct taste, but you can omit it if you want to.
  4. Pour in the sliced vegetables, crush in the stock cube and stir-fry for a minute until the vegetable just starts to soften or wilt.
  5. Add salt to taste and continue stir-frying for another one minute. Serve immediately.

I served my spinach stirfry with  rice but you can serve yours with plantains and yams or as you please. There are lots of options. Enjoy!

Spinach or Ugwu stir fry is tasty , healthy and of course very easy to prepare.It's a versatile side dish that serves as an accompaniment to savoury rice, yam and potato dishes.

Ingredients

  • 500 gr spinach/ugwu/ green amaranth(I used Spinach)
  • 1 Onion bulb, chopped
  • 1 garlic (a piece from the whole clove)
  • 1 tablespoonful vegetable oil
  • 1 teaspoon ground Crayfish(optional)

Likely FAQ’S

1-How do I get the spinach or any other green vegetable to retain it’s vibrant green color?

Try not to overcook the veggies, as the heat in the food continues to cook the vegetable even after it is off the stove.

Another tip is to blanch the vegetable in hot and then ice cold water before use( but this depends on the vegetable you are using). 

2. Can I add any other spice or ingredients to the recipe?

Sure you can. I do too and sometimes add soy sauce . So go ahead and make the recipe yours-

3.  Can I add ginger?

O yes you can add ginger to the spinach stir fry but just a pinch ,as the taste of ginger can sometimes be overpowering in a dish.

4. Can I add chicken , shrimps, fish , beef or tofu

Yes chicken , shrimps and tofu gives the spinach stir fry a delicious and healthier boost .

5. Can I use frozen spinach?

Yes you can use frozen spinach , but first you’ll have to thaw it a collander by running lukewarm water on it until their is no more chunks of ice and then squeeze out as much water as you possible can ,before using it.
