Nigerian Boiled Plantain Recipe/ ingredients * 2 ripe plantains/unripe plantains (ripe plantains are *sweeter*, than unripe plantains, and takes less time to cook, but unripe plantains are also great if you're watching you sugar level.) *Salt to taste *Water (enough to cover the plantains) Boiled Plantain- cooking directions * First wash the plantains thoroughly. This is because, you'll be cooking the plantain with the skin on.I like to use saline water(salt+water) or a mixture of vinegar and water. * Now cut the clean plantains to chunks and place in a pot. *Add enough water to cover it , add salt to taste and leave to cook until the plantains are tender. You can check this by pricking it with a fork.If the fork goes in smoothly...your boiled plantain is ready . *Take the plantains out of the water, leave to cool a bit and peel of the skin. You can serve with pepper sauce, tomato stew, obe ata dindin(fried pepper stew), Palm oil sauce, or eat alone with groundnuts. ENJOY.
