Yay! at last , the long awaited Vanilla cupcake recipe is here.
This recipe is simple, easy and of course delicious.
And to make it even better, the recipe is only for a small batch; just six cupcakes.

So if you have been reluctant to try out any cake recipe for fear of not getting it right and wasting ingredients, this vanilla cupcake recipe is just right for beginners. Nothing complicated and no fuss at all.
I also included a simple vanilla cream icing to top up the cakes. These beautiful cupcakes are already tasty, so feel free to leave out the icing if you want to.

Now here’s our simple 6 vanilla cupcake recipe with vanilla frosting.

Delicious Vanilla cupcakes.

Ingredients for 6 cupcakes
(double or triple recipe at your preference)

  •  45 grams Butter(softened) or Vegetable oil
  • 1 Large Egg
  •  80 grams Sugar
  •  90 grams Plain Flour
  • 3/4 teaspoon(3.75 grams) Baking powder
  •  40 ml Milk
  •  1 teaspoon Vanilla extract/flavor

Preparation

–Before you start with the cupcakes, first grease the cupcake pans lightly with butter and dust with flour. But if using cupcake liners you can omit this step.

–The next thing to do is, preheat the oven at 180ºC for 10 minutes and while the oven is warming up, you can go ahead and prepare the cake batter.

1. In a deep bowl, mix the butter with the sugar and egg, until creamy.

2. Gradually, sift in the flour and baking powder and mix until well incorporated.

3. Also add the milk and vanilla extract and mix until combined.

4. Now fill in the cupcake pans up to 2/3 the capacity of the mold.
Tip: to make fill-up easier and neater, you can pour the cupcake batter into a plastic bag, cut a tip and pipe the batter into the cupcake pans.

5. Finally bake at 20-25 minutes or until the cakes passes the toothpick test. Then take out of the oven and leave to cool on a wire rack.

To make the Vanilla cream frosting/icing, simply follow this easy recipe we have HERE and use this measurements below to make enough for 6 cupcakes.

You’ll need

  •  100 grams Butter (softened)
  • 125 grams Icing sugar
  • half teaspoon Vanilla extract
  • 2 tablespoon Milk
  • 2 to 3 drops red food coloring(to give it this light pink color)

When you have prepared the vanilla butter cream icing/frosting, pipe it on the cupcakes and enjoy!

          Hi Fon, trust you can work with this:
          The Peak milk tin (evaporated) is about 160 grams.
          I have the baking powder in teaspoons already
          and I bet you have a container at home with millilitres reading to measure the milk.

            Thanks so much 4 d recipe. I intend baking commercial cupcakes 2day but my challenge is measurement. I have tomato paste tins weighing 210g, can I use 2¼ of it as 500g flour? N 1 cup for sugar with 250g of butter? I’m at a crossroad, Pls treat as urgent?

            Chidimma, it’s better to get a scale if you want to
            be making cupcakes for commercial purpose so that your cakes always come out
            perfect and accurate and avoid wastage.
            As for your question yes you can use it like that, but like I said
            a scale is your best friend for commercial baking.

    Thanks alot but i have those questions i hope u can help me, i have this lady selling cup ckes around my office where i sell snacks and food her cakes are usually bigger than mine do u think there is any secret to rising the cakes

      Hi Peace, there are several reasons why her cupcakes come out bigger than yours. But I will just list the basic ones.
      One of them is the size of the pan that she uses. Cupcake pans comes in different sizes and hers might be larger than yours.
      Another reason is the amount of batter that she puts in each pan, Some people fill up two-third of the pan, while other prefer to fill up half of the pan,. This will yield two cipcakes of different sizes, even though the same pan was used.
      Hope this helps and always make sure that you follow a cake recipe as it is written , so that you do not have any issues with the batter too.

      Hi dear, as you can see in the pictures above, I also made use of individual silicone pans and also lined them. But lining them isn’t necessary, I just like the aesthetic look and it also makes cleanup easier for me?

      If you want to get the shape of this cake, you will need a cupcake pan or mould, but notwitstanding you can make use of any cake pan that you have handy.

Do you think baking for another 10 minutes will be okay. Thanks

      Hi Omobolanle, so sorry for the very late response, I think you should reduce the temperature of your oven and still bake at 20 minutes. You oven is too hot that is why the cake gets burnt.
      And since oven brands differs from place to place, make sure you check the cake from time to time , so that they don’t get burnt again .
