|Battered plantain served with ”mayo-ketch”|
Battered plantain has become one of my favorite plantain recipes. I had the pleasure of eating it at an Asian wedding. It was served with hot chocolate and was delish. I have recreated it several times in my kitchen and served with omelet, pepper sauce or ”mayo-ketch” and my family just can’t get enough.
I’ll have to confess that we are a plantain loving family, so watch out for more plantain recipes ☺.
Here’s how to prepare this Spicy Battered Plantain.
– 1 Yellow Plantain(use green plantains if you want it crunchy)
– 1 egg
– seasoning cube(maggi,knorr/powder (to taste)
– Pepper(to taste)
– a big Pinch of Salt
– a pinch of Baking soda(optional, but adds ”fluff” to the batter)
– 3/4 Plain Flour( about 2 tablespoonful)
– Water (enough to form a thick paste)
<<Here’s a video recipe on how to prepare Nigerian Battered Plantain>>
1. Break the egg into a bowl, add the seasoning cube, pepper, salt and baking soda(if you’re using any).
Mix well, add the flour and gradually add the water until you get a thick batter. Set aside for later use.
2. Slit the plantain and peel off the skin. Slice the plantains thinly in diagonal shapes or any shape you like.
3. Dip the plantains into the batter, coat thoroughly
Now, fry in hot oil until brown on both sides.
If you are left with some batter, don’t pour it out, add some milk and make a pancake.
I really love that, thanks for the good idea
i will sure try this out this weekend
That’s great Joy.
You’ll love it.

no breadcrumbs here dearie. I have corrected it on the breadcrumbs page. tnks.
Love love this recipe. Nky pls is baking soda same as baking powder?
Thanks dearie, and no ,baking soda is not the same as baking powder.
So I tried this out but had to alter the recipe a lil bit. My mum is vegan and doesn't take egg, so I dissolved powdered milk in water n a cube of sugar in place of the egg and no extra water. I also added a pinch of curry……….end product=DELISH!!!! Thanks a lot for this, and yes, I'm a plantain lover too, all the plantain recipes have been super helpful. God bless
I love the way you altered it to your taste and thanks for the lovely feedback 🙂

@jide; I didn't blame d recipe dear.jst narrated how mine turn'd out,was jst tryn 2 b a lil comical,I wasn't tryn 2 play d blame card
THANKS for this lovely recipe, God bless.
Thanks for you feedback, well appreciated dear 🙂
MINE was a total wreck! At first it was brown just as yours but wen I took a taste , I noticed dat d inside was still raw so I let it fry more and more more and more–and d end product was a disaster*burnt barter n raw plantain*
why blame the recipe when you didn't do it right? I followed the recipe and cut my plantains as thin as the recipe indicated and the inside was well cooked without getting burnt at all. If yours was a wreck, it is only YOUR fault and no one else.
Hi Charcoal , I guess you cut the plantains very big that's why the batter cooked before the inside.
I'm such a bad student..will make it thinner NXT [email protected] nky
You're welcome dear 🙂
