Tuwo Masara (Tuo Masara): Hausa corn meal

Tuwo Masara (tuwon masara) is a bolus meal indigenous to the northerners(fulanis &Hausas) in Nigerian and other parts of west Africa.

I love Tuwo Masara because I can use it as a substitute for Eba and when I have left-overs…I throw it into hot oil and !TADDAM! ..I have a crunchy snack known as ”Kokoro ” or ”Hausa Masa ”…Here’s the recipe.ENJOY!

Ingredients for Tuwo Masara

*1 cups corn meal / corn flour (coarse type..not the one for making Pap)

*2 cups water

Cooking Direction for Tuwon Masara
* Put some water into a small pot and set the boil on medium heat.

*Add the corn and stir continuously until you get a thick and stretchy mix..just like Eba, you can add more corn meal if you want it thicker.the mixture is thick and stretchy. Now add a little water, cover the pot, reduce the heat to low and leave for 2 minutes.

* Now mix thoroughly until the Tuwon is smooth… serve hot and ENJOY!

Tuwo Masara (Tuwon Masara) can be eaten with any Nigerian soup, such as Ogbono soup, Egusi soup or Okra soup. The Northerners enjoy it with Miyan Wake, Miyan Taushe , Miyan Zogale, Miyan Ridi, Miyan Tapasa and Miyan Shuaka

    Nice one. well done. I am from the middle belt and grew up eating tuwo. The best way to make tuwo and it gets properly cooked is firstly making what is called a 'targe' by mixing a small quantity of the cornmeal in cold water and mixing into your boiling water. allow your targe cook for about 5minutes (depending on the quantity, longer for a bigger pot). you van now mix in the remaining cornflour and mix vigourously until all lumps disappear, add a little hot water and cover. reduce heat and leave for about 5minutes until properly cooked. this way, your tuwo will not fall apart but be starchy and easy moldable with fingers.

    Hello please how can i prevent corn meal it from being hard as stone after it cools down after maybe an hour? when prepared as swallow
