Homemade Browning or Burnt Sugar syrup is a dark liquid used as a coloring for Cakes, ice creams and also as a marinade for meats.It is also very easy to make, all you need are 2 ingredients. Here’s how to prepare it.

Ingredients for Browning (Burnt Sugar syrup)

This make about 1 and 12 cups Food Browning

  • 1 cup White or Brown Sugar
  • 1 cup boiling water

Preparation:

1. Pour the sugar into a heavy bottomed pan or pot with high sides. Heat up the sugar on medium heat, until the sugar melts completely and changes from white to light brown caramel, then from light brown to very dark brown (almost black) color. Note: don’t be tempted to stir it until the sugar has melted completely.If using brown sugar, the sugar will melt and turn dark brown faster than if using white sugar.

 2. Now, gradually pour in the boiling water. The browning will foam and bubble a bit, wait until the bubbling goes down, then stir well and continue to cook  for 3 minutes or until the water incorporates with the syrup. Note: if you get lumps,don’t worry about that and keep on stirring until the lump melts into syrup.
 3. Put off the heat and leave to cool,then pour into a glass jar, seal and store in the fridge.It will keep for up to 4 months.

    Thank you so much for the great explanation and the photos. Was very nervous about making Browning. Have had the fruit for my Caribbean Black cake soaking for a couple of months but, have just discovered l can no longer buy cake browning here in New Zealand.
    I was lucky enough to eat this at a friend’s wedding a few years ago and have been hunting recipes ever since.

    Hi, i tried making the home made browning and i believe it came out well. However, when i baked with it I didn’t get that rich dark colour as i was hoping for so i went ahead to order online. But the one i got taste salty and i think it is the one used for gravy and soups. Please i want to know if i can use this for my cake as it taste salty so i am scared that it might nit come out well in my cake.
    Pls advise. Thanks

      Don’t use the salted one
      it is good for meat, soups and gravy
      as you rightly said.
      As for my browning recipe, you can also make
      it with brown sugar or molasses if you can find them
      they yield a darker colored cake, almost blackish.

      It’s supposed to be bitter. It’s when you mix it in what you’re making, the cake wouldn’t be like that.

    Hey thanks for the tip.I stay in Saudi Arabia with my family and finding this things are inpossible. I'mean a Baker and I love to work with my fondant icing, but unfortunately I can't find glocos and CMC here. So my question is, can one make fondant without glucose and CMC? If yes how?
